Ingredients

1 Cup onion, chopped
2 T olive oil
3 cloves garlic
1/2 C chopped carrots
1/2 C chopped celery
2 C cubed butternut squash
16 ounces skinless chicken breast
2 cups cooked wild rice
6 Cups water (or chicken broth, vegetable broth, bouillon, etc.)
Directions
Saute onions, carrots, and celery in oil until soft, about 10 minutes. Add chopped garlic, saute 1 or 2 minutes more. Add squash, water, and chicken. Bring to boil, turn heat down, simmer about 10 minutes. Add chopped chard, simmer another 10 minutes, until chicken is done and squash is tender. Shred chicken and add back to soup. Add wild rice. Add salt and pepper to taste.
