Introduction

Number of Servings: 6

Ingredients

    1 bunch of kale leaves chopped, approx. 4 cups
    1.25 lbs red potatoes, washed, chopped in 2" cubes, skin on
    1 large yellow onion, diced
    6 cloves of garlic, roughly chopped
    1 tsp red pepper flakes (like the kind you put on pizza)
    4 tbsp parsely for garnish
    1 bay leaf
    2 tbsp olive oil
    7 cups water
    salt and black pepper to taste
    3 cups of plain yogurt, soy or dairy (optional)

Directions

Add olive oil, onions, garlic, red pepper flakes and a bay leaf to a large pot over medium heat. Cook for 3 to 4 minutes. add potatoes and one cup of water. Cook for 5 minutes. Add kale and remaining water, cook for 30 minutes or until potatoes are soft. Break up some of the potatoes with the back of a wooden spoon or spatula. Serve with parsley and if desired with a dollop of sour cream, yogurt or the equivalent.

    this was good - but I changed it by using vegetable broth - it gave it so much more flavor. And I used more kale. And did'nt use the bay leaf... - 3/13/13
