Ingredients

    1/2 C Unbleached Flour
    1/2 C White Whole Wheat Flour
    4 t baking powder
    3/4 t salt
    1 C Yellow Cornmeal
    2 Eggs
    1 C Almond Breeze, Unsweetened Original
    1/4 C Light Smart Balance Margarine

Directions

Stir flours, sugar, baking pwd & salt together. Stir in cornmeal. Add remaining ingredients and either beat with electric beater or by hand until just blended. Divide into 12 lined muffin tins and bake in Convection oven at 375 or regular oven at 400 for 15 - 18 min or until light golden brown.
