Introduction

My daughter is allergic to nuts, and all the GF recipes called for nuts... We also like less sugar than most recipes. The original called for 2/3 cup, so I halved it and added molasses. Ingredients

    1/3 c olive oil
    1/3 c Brown Sugar
    2 large eggs
    1 TBS molasses
    tsp vanilla
    1 1/4 c Bob's Red Mills Gluten Free Flour
    1/2 c Buckwheat flour (optional. Can use all Bob's RM GF AP Flour, if desired.)
    2 tsp baking powder
    1 1/4 tsp cinnamon
    1/2 tsp cloves
    1/2 tsp pumpkin spices
    1/2 tsp nutmeg
    tsp xanthan gum
    1 1/2 c banana. (about 3 medium)

Directions

Preheat oven to 350 degrees
Mix all wet ingredients. Add dry. ingredients. Put into greased pan. Bake for 1 hour.
If making muffins, spoon into 12 muffin tins.

Makes 12 servings.

    This matches the Gluten Free Banana bread recipe I concocted using Bob's Red Mill and my mother's old Banana Bread recipe. Just never put in Cinnamon before. - 8/29/10
