Introduction

I was looking for an easy recipe to make with my DayCare kiddlets. This was FUN and EASY. This is a repeat of a peanut butter cookie by *biggirl* with the suggestions from others & using ingredients that I had on hand (low sugar, low sodioum Jif) I wanted to get the nutrion info for my recipe.
I call them Amazing because I was skeptical about this recipe and was amazed that not only were they delicious but they are better than cookies WITH flour. I am not a big PB cookie fan but I am hooked on these -- hmm not sure if that is a GOOD thing! LOL!
My version made 36 "two bite" cookies which fit nicely in my plan. WARNING!!! These are dangerously delicious so proceed with CAUTION! :-D

Number of Servings: 36

Ingredients

    1 Cup Simply Jif Peanut Butter
    1 Cup Sugar In The Raw
    1 Eggland's Best Large Egg
    1/4 tsp. Baking Powder
    1 tsp.Vanilla Extract

Directions

Mix all ingredients in a medium bowl with a STURDY spoon. Using a teaspoon scoop out mixture and roll into balls, place them on A UNGREASED cookie sheet.
Press each ball lightly with the tines of a fork in a criss cross pattern. Bake for 8-12 minutes at 325. (mine were ready in 10) cool on a rack for about 5 minutes - if they start to crumble when taking them off the cookie sheet then cool a little longer.
For softer cookies bake at the low end - crispy cookie bake longer.
Makes approx. 36 little cookies

    Very Good
    I used 1/2c brown sugar & 1/2c icing sugar(no white in the house) and added 1c chocolate chips to it......unfortunately, I LOVED them! lol - 10/2/10
