Introduction

Just two of these satisfy my craving for pecan pie, without all of the fat & calories! Just two of these satisfy my craving for pecan pie, without all of the fat & calories!
Number of Servings: 24

Ingredients

    1/2 cup flour (I prefer unbleached)
    1/2 teaspoon salt
    1 cup packed brown sugar
    2 large eggs
    1 cup chopped pecans

Directions

Preheat oven to 350 degrees. Prepare two mini muffin pans with either mini muffin liners or spray the pans with Pam. Mix all ingredients together. Spoon into pans, filling about 3/4 full. Bake 12-15 minutes, depending on your oven. Watch them so they don't burn! Yields 24 mini muffins. Note: You may add a pecan half to each muffin before baking, but that will change the nutritional information.

    There is no oil or butter or liquid in this recipe, Christy. I can't imagine how you would get it to stick together. Did you forget the butter? my recipe has 10 oz. softened butter. - 11/19/14
