Introduction

A favorite in our house at Christmas time, and a good way to enjoy a bit of eggnog when you don't want to drink all those calories! A favorite in our house at Christmas time, and a good way to enjoy a bit of eggnog when you don't want to drink all those calories!
Number of Servings: 12

Ingredients

    0.25 cup unsalted butter
    0.75 cup sugar
    2 eggs, beaten
    2.25 cups flour
    2 Tsp Baking Powder
    1 Tsp Salt
    1 cup Egg Nog
    0.5 cup raisins
    0.5 cup green candied cherries, cut in half
    0.5 cup red candied cherries, cut in half
    Optional (and not included in calories):
    0.5 cup pecans, chopped

Directions

Melt the butter, and add to sugar. Mix well, and add in eggs, continue mixing well. Combine the flour, baking powder and salt. Stir into batter alternatively with egg nog. Mix this only until dry ingredients are moistened. Add fruit (and nuts if using) and fold well. Pour into a loaf pan, and bake at 350F for 45 minutes or until tests done (depending on oven temperatures and the size of your loaf pan).
