Number of Servings: 10

Ingredients

    • 1 1/2 lbs ground beef (I use a pound of Laura’s Lean Beef 4% and a half pound of ground turkey)
    • 3/4 cup mild picante sauce
    • 1 (4 ounce) can diced green chilies, drained
    • 1/2 cup finely crushed tortilla chips ( I use way more than this depending on how far you want the loaf to stretch and how dense you want it)
    • 1 medium onion, chopped
    • 1 large egg, lightly beaten
    • 1 1/2 teaspoons ground cumin
    • 1-2 teaspoon chili powder (to your preference)
    • 1 teaspoon salt
    • picante sauce
    • 1 cup shredded monterey jack cheese or sharp cheddar cheese

Directions

1. Combine first 9 ingredients and place in lightly greased loaf pan.
2. Bake at 375 for 40 minutes or until done.
3. During last 10 minutes of baking, spoon desired amount of picante sauce over loaf and sprinkle with cheese.
4. Garnish with sour cream and cilantro, if desired.

    mmmm mmm this was good-I used red pepper; didn't have green chillis. will make it again-nice change from regular meatoaf! - 1/31/10
