Ingredients

    2 large eggs
    1/2 c. Applesauce, unsweetened
    1/4 c. oil
    1 c. white sugar
    3/4 c. brown sugar
    29 oz. can Pumpkin
    1 T. Vanilla (I used Watkins)
    4 tsp. Pumpkin Pie Spice (I used Watkins)
    2 tsp. baking soda
    2 tsp. salt
    1 tsp. baking powder
    3 c. whole wheat flour
    1/4 c. wheat germ
    1/4 c. milled flax seed
    2/3 c. water (or use Soy milk to boost protein)
    Choc. chips (2 c.) optional; Ghiradelli white or semi sweet dark (not included in calorie count)

Directions

Makes 2 large loaves; or 24 good sized muffins; Bake at 350 degrees until toothpick comes out clean.
