Introduction

Creole cooking originated in the aristocratic society of New Orleans, where the locals adapted
classical European recipes to the ingredients they had on hand. Donít confuse Creole with Cajun
cooking, which is based on the country-style cooking of the Acadian settlers. Creole cooking does
not pack the heat that Cajun cooking does.
