Introduction

Creole cooking originated in the aristocratic society of New Orleans, where the locals adapted
classical European recipes to the ingredients they had on hand. Don’t confuse Creole with Cajun
cooking, which is based on the country-style cooking of the Acadian settlers. Creole cooking does
not pack the heat that Cajun cooking does.

Ingredients

    2 tbsp onion flakes
    2 tbsp celery seed
    2 tbsp dried oregano
    1 tsp hot or sweet paprika
    1 tsp dried thyme
    2 tsp black peppercorns
    1⁄2 tsp cayenne

Directions

Combine the onion flakes, celery seed, oregano,
paprika, thyme, peppercorns, and cayenne
in a coffee grinder. Process until blended
and peppercorns are crushed. Store for up to
6 months in a closed container and place in a
dark area.
