Introduction

Ingredients

2 lbs cubed, cooked chicken (about four breasts)
2 cups/cans chicken broth
2 15 oz cans of northern beans or navy beans, drained
1 small can (4 oz) of diced green chili peppers, drained
1 small onion, diced (approx. .5 cup)
chili powder
garlic powder
cumin
oregano
crushed red pepper
Directions
Dice the chicken and onion, and cook with the green chilis in a non-stick skillet (you shouldn't need to add oil).
Once the chicken is cooked through, add it to a large pot with all of the other ingredients (be sure to drain the beans & green chilis, or it will get too "soupy").
Spice to taste. I usually add about 2 tsp chili powder, and 1 tsp of all the other spices (garlic, cumin, red pepper). If yyou like it spicy, add lots more chili powder, pepper, and garlic!
Cook on low heat until it boils, then bring back to a simmer, and you're done!
Makes 6 small servings.
If this is the main dish (and it usually is at our house!) we divide it into four, so everyone gets 1.5 servings, and we add Monterey Jack cheese and saltine crackers on top (NOT included in the calorie count for this recipe!). Yum! Also great with sour cream. I'd love to try this with fresh green chilis next time I'm out west!
