Introduction
I just made this frittata for dinner last night. Served with simple potatoes o'brien and it was wonderful. Even my picky fiancee who does not eat veggies ate it - spinach and all!! Ingredients

4 large eggs, whole
4 egg whites
1 oz. (2 tbsp) milk, 1% lowfat
splash of water
1/2 c. grated parmesan cheese
1 c. frozen spinach, unthawed and drained
6 strips of turkey bacon
Directions
*Makes 4 big servings for adults or cut into smaller size
*Combine eggs with egg whites, milk and dash of water
*Whip together just like scrambeled eggs, season to taste
*In large, non-stick skillet cook strips of bacon according to package, empty when finished cooking, cut bacon in small strips when cool
*Spray pan with non-stick spray, lower temperature and pour in egg mixture
*Add spinach, chopped bacon pieces and parmesan cheese on top of egg mixture
*Let eggs set up in pan, appx. 8 min. on the stove top then place under broiler for about 1-2 minutes
*Cool slightly and serve!
