Introduction

Modified recipe from allrecipes.com to add some flavor and reduce density. Think recipe would also be good with some finely chopped fresh apple (maybe 1-2), raisins and/or dried apples. Also think might be good substitute lemon extract for vanilla and add 2-3 tbsp poppy seeds. Ingredients

    1 cup rolled oats (not instant or quick cooking)
    1 cup low-fat buttermilk
    1/2 cup unsweetened applesauce
    1/4 cup egg substitute
    1 tsp vanilla extract
    1 cup whole wheat bread flour
    1 1/8 tsp baking powder
    1/2 + 1/8 tsp baking soda
    1/2 tsp salt
    1/2 tsp ground cinamon
    1/8 tsp ground nutmeg
    1/2 cup packed brown sugar (dark or light)

Directions

In a small bowl, mix oatmeal with buttermilk. Set aside for 1/2 hour. In separate bowl, mix all dry ingredients. Set aside. At end of 1/2 hour wait, add applesauce, egg substitute, vanilla. Let stand (approximately) 1.5 hours to come to room temperature. Bake 375 deg F 20-25 minutes or until toothpick comes out clean. Let cool 5 minutes in pan on a cooling rack.
