Introduction

This is an adaptation of a recipe I found on another site. I haven't actually made this version, but the original one was delicious! I've substituted Splenda for sugar, unsweetened applesauce for oil, Egg Beaters for an egg, whole wheat flour for white flour, and 1/2 cup mini chocolate chips for the original full cup of regular chocolate chips. Ingredients

    1 cup Libby's 100% Pure Pumpkin (canned)
    1 cup Splenda No Calorie Sweetener
    1/2 cup unsweetened applesauce
    1/4 cup Egg Beaters
    2 cups whole wheat flour
    1 tsp vanilla
    2 tsp baking powder
    1 tsp baking soda
    1 tsp cinnamon
    1/2 tsp salt
    1/2 cup Nestle Tollhouse Mini Chocolate Chips

Directions

1. Preheat oven to 375 degrees.
2. Mix Splenda, pumpkin, applesauce, and Egg Beaters.
3. Add vanilla.
4. Mix dry ingredients and then add to pumpkin mixture.
5. Add chocolate chips and mix.
6. Drop 30 even spoonfuls onto cookie sheets and bake at 375 degrees for 10-12 minutes.
7. Enjoy!

Makes 30 moist, delicious cookies.
