Ingredients

*Enjoy Life Semi-Sweet Chocolate Chips, 5 Oz. or 1/2 package)
Instant coffee Granules, 3 tsp
*Tofutti Better than Cream Cheese (Immitation Cream Cheese), .5 tbsp
*Solo almond paste 12.7 oz can/ 2 TB serving, .25 serving (i.e. 1/2 Tablespoon)
Vanilla Extract, .25 tsp (remove)
Protein Technologies International ProPlus Soy Protein Isolate, 1 oz (mix 1/4 cup with 2/3 cup water and three tsp water then use 1/4 cup of this mixture in place of Evaporated milk)
Granulated Sugar, 3 tsp (remove)
Water, tap, 2/3 Cup
*BUTTER- I CANT BELIEVE ITS NOT BUTTER, 2 tbsp
Directions
Evaporated Milk Substitute: (mix 1/4 cup soy protein with 2/3 cup water and three tsp water then use 1/4 cup of this mixture in place of Evaporated milk)
Mix Chips, Butter substitute, and imitation coffee granules in a microwave safe bowl - when ready cook this for 1.5-2.5 mins mixing halfway through cooking time.
Mix remaining ingredients together. Fold these into the melted chocolate then pour into a shallow dish. Cover and refridgerate for 2.5 hours.
Use a spoon to create balls - roll with hands and place on wax or parchment paper lined sealable container. Chill for at least 30-60 mins prior to serving.
Optional: dust with powder sugar, crushed almond, cocoa powder.
