Introduction

I decided to make a holiday-inspired breakfast salad on Christmas morning. If I were to add anything else, it would be a little unsweetened coconut. I used frozen blueberries, but I think fresh ones would be better, especially if you want to prevent the pineapple from turning dark in the blueberry juice. Ingredients

    1.5 C. Strawberries
    1 C. Blueberries
    8 oz. can Dole Pineapple Tidbits (with juice)
    5 oz. greens (I used Earthbound Organic's Baby Arugula)
    1 7 (or 8) oz. container of plain yogurt (I like Fage)
    1 C. granola (i used Mocha granola w/chocolate chips & almonds)

    To taste:
    (Sea) Salt - just enough to balance flavor
    McCormick's Cocoa-Chili Pepper blend
    Cinnamon

Directions

Toss all ingredients.

Makes 5 servings.
