Ingredients
-
1 Can of Black Beans (do not rinse)
1 Can of Tuna in Water
1/8 box of Whole Wheat Pasta, then Cook (also a good time to use left over pasta, also you can use rice or gluten free pasta)
Couple dashes of Salt & Pepper. I also like to add Tumeric and Ginger, anything that suits me that day!
2 TLB of Mircle Whip (I don't see why you couldn't omit this or replace it with plain yogurt or cottage cheese)
Cilantro and Salsa to top off your yummy taco
Tortilla..I like to use Corn Tortilla..give them a little cooking on the stove top on both sides
Directions
Add Tuna & Black Beans, mix in Miracle Whip, add salt & pepper to taste. Add cooled Pasta. If you use spaghetti I like to break mine up in small pieces for my tortilla.
If you use Corn Tortillas, cook on High only a minute or so on each side.
2 Tortillas makes a very nice lunch :) Or 1/2 cup of Tuna Mix for salad
Excellent for Pasta Salad and in my opinion even better in a nice warm tortilla wrap topped off with Fresh Cilantro Snips and a squeeze of Lime! Don't forget to add your Salsa..YUM!
