Ingredients

2 T soy sauce (gluten free tamari)
1/2 t sugar
1/4 t pepper
2 T vegetable oil
2 eggs, beaten
1/2 lb ground turkey or chicken
1 medium carrot, finely chopped
1 celery rib, finely chopped
1 scallion, chopped
1 small bunch of broccoli, finely chopped
1 t minced fresh ginger
1 garlic clove, minced
2 cups cold cooked brown rice
Directions
1. In a small bowl, combine soy sauce, sugar and pepper; set aside.
2. In a large skillet, heat oil. Add eggs and cook over medium heat, stirring constantly, until eggs are soft-set, about 45 seconds. Transfer eggs to a bowl and set aside.
3. Add ground turkey, carrot, celery, and scallion to skillet and cook over medium heat, stirring often to break up lumps of meat, until turkey is cooked through, about 3-5 minutes. Add broccoli, ginger and garlic and cook, stirring often, 1 minute.
4. Increase heat to high, add rice, and stir-fry until heated through, about 1 minute. Add soy sauce mixture and stir-fry 30 seconds longer.
