Ingredients

    1 cup long grain white rice, cooked & left to cool
    2 artichoke hearts, roughly chopped
    7 oz can of tuna packed in water
    1/3 cup frozen peas, cooked & cooled
    1 large tomato, diced small
    1/4 cup mozzarella cheese, cubed
    1/4 green bell pepper, diced
    3 mushrooms, thinly sliced
    2 tablespoons pine nuts, lightly toasted
    2 tablespoons finely chopped fresh flat-leaf parsley
    4 tablespoons EVO
    1.5 tablespoons lemon juice
    1 clove garlic, finely chopped
    1 tsp. salt
    1/2 tsp. black pepper

    Mix together rice, artichoke hearts, tuna, peas, tomato, cheese, bell pepper, mushrooms, pine nuts, and parsely in a bowl.

    Mix together the oil, lemon juice, garlic, salt & pepper (or shake in a tight fitting jar). Pour dressing over the rice mixture and combine thoroughly.

    It's easy to adapt this recipe to vegetarian by omitting the tuna and adding olives, sun dried tomatoes, capers, etc.
