Introduction

A complete one dish meal. Skillet lasagna made lighter using turkey meat. I don't like ricotta so I changed the original recipe to add mozarella instead, it comes out creamy and delicious. Add some fresh basil if you have it on hand. Sometimes I add a few slices of turkey bacon in with the onions in the beginning of the recipe. A complete one dish meal. Ingredients

    1 tbs olive oil
    1 medium onion, minced
    3 garlic cloves, minced
    1/8 tsp red pepper flakes
    1 lb. 93% ground turkey
    10 curly-edged lasagna noodles, broken into 2" lengths
    1 (28 oz) can diced tomatoes
    1 (8 oz) can tomato sauce
    1/2 cup grated parmesan cheese
    1 cup mozarella cheese (fat free)

Directions

This recipe serves 4 to 6 people.

1. Heat oil in a large nonstick skillet, add onion and cook until the onion begins to brown (5 minutes). Stir in garlic and red pepper flakes and cook for 30 more seconds. Add the ground turkey meat, break apart, and cook until no longer pink (about 4 minutes).

2. Scatter pasta over meat, but do not stir. Pour the diced tomatoes with their juices and tomato sauce over the pasta. Stir. Cover and bring to a simmer. Reduce heat and simmer, stirring occasionally, until pasta is tender, 20 minutes.

3. Turn off heat and stir in parmesan and mozarella cheeses. Let stand for 5 minutes, stir and serve.
