Introduction

This hummus uses the addition of tofu and cannellini beans to make a lower calorie version.

Ingredients

    1-1/2 c. cannellini beans (or 1 can drained & rinsed)
    1-1/2 c. garbaanzo beans (or 1 can drained & rinsed, reserve 2 T juice)
    1/4 c. tahini
    12 oz firm tofu, blot dry, but no need to press
    3 cloves garlic, peeled
    juice of one lemon
    1/2 t. salt
    pinch cayenne pepper

Directions

Start the food processor with the steel blade, and with machine running drop in the garlic cloves one at a time.

Stop machine and add all other ingredients, including 2 T of cooking juice from the garbanzo beans, and process until smooth.

Makes 8-1/2 c. servings.
