Ingredients

    1 1/2 c. red lentils, suspicious specks removed, then rinsed
    4 c. water
    salt
    2 T. unsalted butter
    2 cloves of garlic, minced
    2 t. minced ginger
    1/4 t. red pepper flakes
    1/2 t. ground mustard
    1 t. ground coriander
    1/2 t. ground cumin

Directions

Stir lentils, water and 1 t. salt together in a large pot. Bring to a boil, cover, reduce heat and simmer until thick, about 20 minutes.
Melt butter in a small skillet over medium heat. Add garlic, ginger, and spices. Stir until fragrant, about 2 minutes.
Add butter mixture to lentils and continue to cook until flavors have mingled, about 5 minutes. Add salt, if you like.
