Introduction

This dish can be made in the crockpot or on the stove top; the ingredients can be put in all at once so it makes a great dish to put in the crockpot as you head out to work!
Our household periodically cooks chicken leg quarters and breasts then skins and debones, chops the meat and puts it up in ziplock bags in the freezer for uses such as this.

Number of Servings: 9

Ingredients

    Meat portion only from 5lbs of cooked roasting chicken
    1 lb. bag frozen baby limas
    1 lb. bag frozen whole kernel corn
    2 cans diced tomatoes including juice
    3 cans chicken broth(reduced sodium)
    2 tsp garlic salt (or substitute garlic powder to reduce sodium)
    4 tbsp minced, dried onions
    4 tbsp barbeque sauce
    black pepper and sea salt to taste

Directions

Mix all ingredients in at least a 5 quart dutch oven or stew pot. Cook on med-high until frozen ingredients are thawed then simmer 20 minutes or until ready to eat. Alternateively, place all ingredients in a large crockpot on high for 4 hours or low for 8 or so.
