Introduction

Quick and easy, but tasty and nutritious. My husband and kids love this. Quick and easy, but tasty and nutritious. My husband and kids love this.
Number of Servings: 12

Ingredients

    1 tablespoon vegetable oil
    1 cup diced raw celery
    3 medium raw onions, chopped
    1 pound carrots, chopped
    12 cups water
    4 tablespoons Better than Boullion chicken base
    1 pound diced rotisserie chicken
    8 ounces raw Barilla multigrain elbow macaroni

Directions

Sautee celery, onions, and carrots in oil in large dutch oven over medium heat for 10-15 minutes. Meanwhile, stir chicken base into 12 cups water until well mixed, and add to pot. Bring to a boil and simmer on low heat for an hour and a half. Add chicken, and cook another 15 minutes. Add macaroni, and cook another 15 minutes. Makes 12 servings. Serving size is 1 1/2 cups.
