Introduction

Number of Servings: 12

Ingredients

    2 medium russet potatoes
    6 oz. canned tuna in water, drained
    1/2 cup scallions, chopped
    1/2 cup parsley, chopped
    1/2 cup cilantro, chopped
    3 oz. fat-free feta, crumbled
    1/2 Tbsp. ground coriander
    1/2 Tbsp garlic powder
    2 Tbsp jarred capers, drained
    1 cup egg substitute (Egg Beaters, etc.)
    12 egg roll wrappers (7 inches square)

Directions

1. Preheat oven to 350 degrees F. Dice and boil 2 russet potatoes until tender (or microwave them, cool, and peel). Mash potatoes in large bowl.
2. Mix in 6 oz. water-packed tuna, 1/2 cup chopped scallions, 1/2 cup chopped parsley, 1/2 cup chopped cilantro, 3 oz. crumbled fat-free feta, 1/2 Tbsp ground coriander, 1/2 Tbsp garlic powder, 2 Tbsp capers, 1 cup egg substitute and pepper to taste. (You will not need to add salt because the tuna, feta and capers are already salty.) Mix well.
3. Spoon about 3 Tbsp filling onto 1 egg roll wrapper. Fold corner over to make a triangle, sealing edges with water. Place turnovers on a sprayed baking sheet and spray tops with olive oil. Bake at 350 degrees F for 25 minutes, or until desired brownness, flipping over once during cooking time.

Makes 12 servings of 1 turnover each, but they are so low in calories and fat that eating 2 turnovers causes no guilt. Makes a good meal with vegetable soup or salad.
