Ingredients

    6 slices Roast Beef, sliced THICK
    1.5 cup Ricotta Cheese, part skim milk
    1 egg
    1 tbsp Parsley, dried
    1 tbsp Italian seasoning
    1 jar (about 0.5 cup per serving) Spaghetti Sauce, Classico Tomato & Basil
    1/2 cup grated Parmesan Cheese
    1/2 cup shredded Cheddar Cheese

Directions

Mix the ricotta cheese, parmesan cheese, egg, parsley, and italian seasoning in bowl - combined well. Lay one slice of roast beef on counter and fill with ricotta cheese mixture, roll, and place in casserole dish. Repeat with all slices. Pour spaghetti sauce over the rolls, then put shredded cheddar cheese on top and bake in oven on 325 degrees until everything is warmed through and bubbly (approximately 25 minutes). I like to serve with spaghetti squash.

    Sounds great, but use with calorie caution. I did a makeover on this to substitute fat-free cheddar and found that the amounts in the nutrition calculations seem to be off a little. Sorry, JNK - but it says 2 oz roast beef where I think you meant 2 oz per serving, same is true for the tomato sauce. - 3/24/13
