2 Tbsp splenda
1 cup whole wheat flour
1/2 cup all-purpose white flour
1 cup cornmeal
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 1/4 cups skim milk
1 1/2 Tbsp vegetable oil
1 1/2 Tbsp fat free plain yogurt
1/2 cup reduced fat sharp cheddar, shredded
1/4 cup jalapenos, diced
Directions
Preheat oven to 375 degrees. Coat mini-muffin pans with nonstick cooking spray.
Stir together splenda, flours, cornmeal, baking soda, baking powder and salt. Stir in milk, oil and yogurt until the batter is moist by lumpy. Stir in cheese and jalapenos.
Fill the muffin cups. Bake 15 to 20 minutes until firm and beginning to turn light brown around the edges. Best served warm from the oven.
