This is NOT a dessert—although it could be. :-) But you're not given the choice of "breakfast" in the main categories.Whatever you call it, it's kind of a decadent breakfast. For sheer naughtiness you could top it with whipped cream. But I didn't do that, and extra calories and nutrition info. are NOT calculated into the recipe.

Ingredients

FRENCH TOAST
4 slices wheat bread
1 large egg
1 large egg white
2 Tbsp. eggnog
3 Tbsp. 2% milk (nonfat will lower the calories a little)
1 tsp. sugar
cinnamon, to taste
nutmeg, to taste
4 Tbsp. chopped pecans
APPLE TOPPING
2 large apples, peeled, cored, and thinly sliced
2 tsp. cornstarch
1 Tbsp. sugar
1/2 tsp. cinnamon
2 Tbsp. orange juice
2 Tbsp. water, more as necessary
Directions
makes 2 servings of: 2 slices of French Toast topped with half of the apple topping
APPLE TOPPING:
In a small saucepan, toss the apples with cornstarch, sugar and cinnamon. Mix in 2 Tbsp. of orange juice and 2 Tbsp. of water. Cook over medium heat until it boils and thickens. If necessary, add more water to get a better consistency. Reduce heat to low and simmer, stirring occasionally, while you prepare the French Toast.
FRENCH TOAST:
Mix together the egg, egg white, eggnog, milk, 1 tsp. sugar, cinnamon and nutmeg until thoroughly blended.
Heat up a skillet on medium-high; spray lightly with cooking spray (like PAM).
Dip one slice of bread in the egg mixture to coat both sides of the slice. Put the coated bread in the skillet, then repeat the process (one slice at a time) with as many slices as will fit into your skillet at one time.
Sprinkle 1 Tbsp. chopped pecans over the top of each slice of coated bread and then gently press them down into the bread (I use my fingers, but the back of a spoon would work).
When the first side is golden-brown,(30 seconds to 1 minute), flip it over and cook the second side until golden-brown.
Remove 2 slices of French Toast to a plate and top with half of the apples; prepare a second plate the same way. :-)
Serve hot.
