Ingredients

125gms butter
1 cup liquid (1/2 cold water, 1/2 sherry, whiskey or rum)
1 tsp baking soda
1 tsp baking powder
3/4 cup sugar
1/2 tsp mixed spice
1/2 tsp cinnamon
1kg mixed dried fruit including glace cherries and peel
2 TBLSP treacle or golden syrup
1 tsp each of vanilla extract, rum, lemon and almond essences
2 cups flour
2 cups flour
Directions
Preheat your oven to 300 F
Boil together the fruit, sugar, liquid, spices, treacle and butter for 3 minutes. Remove from the heat.
Add the tsp baking soda, the mixture will foam up, stir well, set aside to cool.
Sift together the flour and baking powder.
beat the eggs and essences and add to the cooled fruit mixture.
Fold in the dry ingredients.
Spoon into a lined and greased 8 inch round or square cake tin.
Bake 2 1/2 - 3 hours at 275 - 300 F ( 135 - 150 C)
Cake is done when a skewer inserted into the centre comes out clean.
Cut into 30 pieces.
