Number of Servings: 4

Ingredients

    Chicken Breast, no skin, 2 breast, bone and skin removed
    Yellow Sweet Corn, Frozen, 2 cup kernels (or 1 can)
    Beans, black, 2 cup (or 1 can)
    Onions, raw, 1/2 cup, chopped
    Green Chili Peppers, canned, 1/4 cup
    Chicken broth, less/reduced sodium, 2 cans
    Water, 1 cup
    Chili powder, 1/2 tbsp
    Cumin, 7/8 tsp
    Garlic, 1 1/2 tsp
    Olive Oil, 2 tbsp
    Bay leaves, 2 leaves
    Cilantro, chopped, raw,1/2 cup

    Topping
    Sour Cream, 1 tbsp per serving
    Diced Tomatoes, 1/4 cup per serving

Directions

In a large sauce pan, saute onion in olive oil until onion is translucent, add garlic until golden. Add the chicken broth and water next, then add the rest of the ingredients except the cilantro. Bring to a boil and then reduce to med/low heat. Cook for 15 min or until chicken is cooked and tender. Remove chicken and shred, add the chicken back to the broth along with the chopped cilantro. Cook on medium heat for another 15-20 min. Ladle into a bowl, add 1 tbsp of sour cream to the top of each serving and top with fresh diced tomatoes...Enjoy!!
