Ingredients

2 cups all purpose flour
1/2 cup unsweetened cocoa powder
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
15oz can of black beans unstrained
1 cup sugar
zest from 2 medium size oranges
Directions
1. Sift together dry ingredients. Puree black beans (no need to drain can) with cinnamon and all spice. Mix beans and dry mix together until blended.
2. Divide dough; put pieces on opposite sides of either a parchment-lined baking sheet or one that is non-stick. Shape each into a 12 inch-long, 1/2 inch-thick log (wetting hands before handling will help it not stick to your hands when forming). Bake at 350 degrees for 25 minutes; cool 20 minutes.
3. Slice into 1/2 inch-thick cookies. Stand them up on the baking sheet; bake for 15 minutes. Cool to room temperature. This makes 48 servings.
