Ingredients

    2 cups Fresh spinach
    1/4 c chopped red bell peppers
    1/8 c chopped red onion
    1/2 tsp red cayenne
    1/8 tsp turmeric
    1 tsp olive oil
    1 lg Egg

Directions

In hot non-stick pan add olive oil, heat briefly, pour off excess if any
Add onions and peppers - heat through
Add fresh spinach - cover and cook on low until spinach is wilted - move spinach and veggies to one side
Add egg - cook as desired (easy, hard, scrambled or poach in different pan)
Remove spinach to plate and top with egg
