Number of Servings: 96


    2 cups rice flour (can use any flour)
    3 tsp. cinnamon
    2 tbsp. baking powder
    1 tsp. salt
    11/2 cups applesauce or oil
    2 cups fructose
    4 eggs
    3 cups apples, chopped
    1 cup hazelnuts, chopped (optional)


Sift together first 4 ingredients. In a large bowl combine applesauce, fructose and eggs; add dry ingredients. Fold in apples and nuts. Bake in greased bundt pan in a 350 oven for 40 to 50 minutes.
I used mini muffin tins and just check after 20 minutes of baking. Will be done when toothick comes out clean.

  • As someone who follows a gluten free diet I loved these. I ue pumpkin instead of applesauce. I would only use 2 tsp of cinnamon. - 11/22/12
