Introduction
My inlaws taught me to make this simple salad. It is SOOOO simple and so good. It also calls for some salt and dill, which you can vary to taste. My inlaws taught me to make this simple salad. Ingredients

1 Large Cucumber
2 Tbsp. of Chopped Onion
1 oz. container of Fat Free Sour Cream
Salt to taste
Dill to taste
Directions
Peel the cucumber and slice very thin (a mandoline is good). Place slices in bowl with chopped onions. Sprinkle some salt on the veggies, put a folded cheesecloth or heavy paper towl down in the bowl and weight with a smaller, clean bowl.
Place mixture in fridge for an hour or two to draw some of the water out of the cucumbers.
Drain off the water, mix in the remaining ingredients. I LOVE a lot of fresh dill. Cover and let refrigerate for a few hours to mesh flavors.
This is my favorite summer treat, next to tomato sandwiches.
Divide into three equal servings (will depend upon the cuke, but this is pretty low cal!)
