Introduction

Simple and not terribly fattening (although a bit high in sugar). Simple and not terribly fattening (although a bit high in sugar).
Number of Servings: 2

Ingredients

    --Pork Cutlets, about 8 oz.
    --1 T olive oil
    --2 T fig preserve
    --2 t chili powder
    --salt and pepper as needed, I never add salt, but I do add some pepper to cut the sweetness a bit.

Directions

1. Warm olive oil in skillet (not stick is easiest, but I often do this with a cast iron skillet and find it doesn't stick badly).
2. Place cutlets in skillet, generously coating them with chili powder (naturally use less if you don't want it spicy -- can substitute ginger or any other spice you prefer if you don't like this combination).
3. Cook through, turning as needed on medium heat.
4. Add fig preserve and cook for a minute, or until bubbling.
5. Ready to serve!
