Ingredients

    No-Stick Cooking Spray
    1 (18.25 oz.) box Pillsbury® Reduced Sugar Yellow Cake
    1/3 –½ cup cream cheese softened
    ½ teaspoon ground cinnamon
    ¼ teaspoon ground ginger
    1/8 teaspoon all spice
    1 cup peeled and shredded Granny Smith apple (about 1 large) OR 1 cup low-sugar fruit cocktail with ½ juice [if you use all the juice, increase the oatmeal]
    ½ cup chopped walnuts, almonds or cashews (probably not peanuts)
    2 large eggs
    1 cup oatmeal
    ¼ cup skim milk

Directions

1. HEAT oven to 375° F. Spray cookie sheets with no-stick spray.
2. COMBINE softened cream cheese and egg. Add half cake mix and in a medium bowl with an electric mixer at low speed until a coarse meal. Add spices and ½ of the oatmeal. It will be thick- then add remaining cake mix, oatmeal and nuts at the same time. Add apple, or fruit cocktail. Mix by hand until a dough forms. Drop by large tablespoonfuls, 2 inches apart on sprayed cookie sheets.(I used an ice cream scoop with dispensing lever 1/3 full)
3. BAKE 11 to 13 minutes or until edges are light golden brown. Cool for 1 minute. Remove to cooling rack.
