Introduction

These meatballs receive their nutritional boost from the pumpkin, in lieu of eggs. They come out moist and you cannot detect any pumpkin taste. This recipe can be cut in half for a family of four. Ingredients

    2lbs lean ground beef
    1lb ground pork
    1 c. canned pumpkin
    1 c. lowfat milk
    4tbs garlic, minced
    4tbs minced parsley
    1 c. bread crumbs
    1/2 c. white cornmeal
    1/2 c. grated parmesan
    1/2tbs oregano
    1/2tsp ground nutmeg

Directions

Combine all ingredients in bowl, mix thoroughly with hands. Make uniform balls and place on cookie sheet lined w/ foil. Bake for 30-35 min @ 325 degrees. Makes about 46 2 inch meatballs. Serving size is for 3 to 4 meatballs.
