Ingredients

3 egg whites, beaten
1 cup fresh spinach leaves
1 oz. Reduced-Fat Feta
1 oz. Canadian Bacon, chopped
pepper to taste
Directions
Heat a non-stick skllet over med-hi heat. Spray with non-stick cooking spray. Add canadian bacon and spinach leaves and saute until leaves wilt substantially (but not so far that they get stringy). Add egg and let cook until it reaches the desired brownness on the bottom. Add the feta to the top of the omelette and fold over. Cook one more minute to let the cheese melt. Finish with black (or red) pepper to taste. Be carefule adding salt becuase the cheese and bacon are already very salty. This makes 1 serving. I suggest serving with a fresh tomato, cut into wedges, and a piece of whole wheat toast for a balanced breakfast.
