Introduction

Number of Servings: 4

Ingredients

    2 (8 oz) packages Tofu Shirataki Noodles
    1 egg beat (can use egg beaters or other egg substitute)
    1 6oz container of plain greek yogurt
    1/4 c fat free or reduced fat sour cream
    1 pkg soy crumbles
    3 cups Muir Glenn spaghetti sauce (or your choice)
    1 cup light mozzarella cheese

Directions

Preheat oven to 350. Drain noodles, rinse for 2-3 minutes. Then microwave them for about 2 minutes. Dry noodles (I pour onto paper towel). Beat one egg or use egg substitute (you could also use mozzarella cheese) and mix with noodles. Pour this mixture into a pie plate. Mix yogurt and sour cream (you can add onions and peppers to this) and pour over noodles. Top noodles with soy crumbles and spaghetti sauce. Bake for 35 min, then add cheese and bake another 5 min.
