    Grapeseed Oil, .5 tbsp
    Onions, raw, .5 medium
    Peppers, sweet, red, fresh, .5 large
    Zucchini, 3 medium
    Collards, 1 cup, cooked and chopped
    Organic Pinto Beans, 1 can

    Salsa, Hot Chipotle, 2 tbsp
    Salsa, Fresh Packed Mild, 4 tbsp
    Ground cumin, 1 tbsp
    Chili powder, 1 tbsp
    Chipotle Powder, .50 tsp
    Salt/Pepper to taste
    1/2 - 1 cup water


Heat Oil in medium pot. Add Onions, Peppers and Zucchini. Sauté until tender and add remaining ingredients and simmer for 5-10 minutes. With a stick blender, blend until desired consistency leaving some vegetable and beans intact for texture!!!

Can be topped with diced onion, cilantro, salsa, sour cream or shredded cheese!!!
