Introduction

Number of Servings: 30

Ingredients

    1/2 pound of liver(pork is preferred but any kind can be used)
    1/2 pound pork fat or bacon
    1 small onion
    3-4 cloves of garlic
    Salt and pepper to taste
    2 eggs
    about 1/4 cup flour (this depends on your other ingredients it should be like thick porridge when mixed.)
    any combination of herbs you wish (optional)

Directions

If you have a grinder put the liver, fat, onion and garlic through it. If not use a blender or food processor to grind everything together. You may need to add a little milk if using blender or food processor.

Pour out into a bowl and add salt and pepper (dont forget bacon has salt in it so err on the side of caution), eggs and flour. Mix well, pour into a loaf pan. Bake at 325 for 40 min. or so. Allow to cool.

Spread about 1 tbsp on slice of Rye bread, top with your choice of condiments (Gotta try the beet pickles really!) and enjoy.

This makes about 30 servings.
