Ingredients

    1 2/3 cups all-purpose flour
    1/3 cup unsweetened cocoa powder
    1/2 cup white sugar
    1/2 cup finely ground almonds
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    4 egg whites
    1 teaspoon almond extract

Directions

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

Combine the flour, cocoa, sugar, ground almonds, baking powder and baking soda.

Beat slightly the egg whites and almond extract. Add the dry mixture and mix well. Using a pastry cutter works well as this is a dry dough. Form the dough into 2 logs.

Place logs onto the prepared baking sheet. Bake for 30 minutes. Let cool slightly and cut diagonally into 1/2 inch (finger width) slices. Bake slices another 8 to 10 minutes until dry. Cool completely and store in an airtight container.

Best made as directed but can be made as a soft cookie, roll into balls and only bake once.
