Introduction
Growing up, I always loved my mom's baked bean recipe. For Christmas this year, I asked "Santa" for my very own beanpot complete with a copy of Mom's recipe! Ingredients

1/2 lb lean salt pork (extra thick bacon can be used)
16oz bag of small white beans, dry
1/2 C Molasses
1/4 C Honey or Maple Syrup
1t dry mustard
Directions
Soak beans overnight.
When ready, cover with fresh water and bring to a boil for 5-10 minutes, skimming foam.
Meanwhile, place 1/2 lb diced salt pork/bacon into bottom of bean pot.
Add 1/2C molasses and 1/4C honey or maple syrup.
Add 1t dry mustard.
Add beans with just enough water to cover. Retain extra water to add as necessary to beanpot while cooking.
Cook in a slow oven (275-300*) for 7-8 hours. Gas ovens are typically quicker.
Makes six 1-Cup servings.
