Ingredients

    1 C. yellow cornmeal
    1 C. white flour
    1/3 C. honey
    1/3 C. sugar
    4 oz. butter, unsalted
    3/4 C. 1% milk
    1 large egg
    1 1/2 C. blueberries

Directions

Heat oven to 400 degrees.
In a bowl, combine baking powder, cornmeal and flour.
In the bowl of a stand mixer, combine milk, butter, egg, sugar and honey. Beat until combined.
Stir in the cornmeal mixture.
Fold in the blueberries.
Spray a muffin pan with nonstick cooking spray.
Pour batter into muffin cavities.
Bake 15-20 minutes.
Makes 12 muffins.
