Ingredients

    1/2 lb. orzo pasta
    2 T. olive oil
    2 c. zucchini, diced
    1 c. red onion, chopped
    3 cloves garlic, chopped
    1 15-oz. can chickpeas (garbanzo beans)
    1/2 c. parsley leaves, chopped
    1/4 c. mint leaves, chopped
    1/2 c. feta cheese, crumbled
    salt & pepper, to taste

Directions

Bring a large pot of salted water to a boil. Add orzo and cook to al dente.

Heat extra-virgin olive oil in a skillet, add zucchini, onions and garlic, season with salt and pepper and cook 6 to 7 minutes until tender, add chick peas and heat through. Toss with herbs, orzo and cheese, adjust salt and pepper and serve.

    Incredible!
    I love chickpeas so this appealed to me right away. My teen son turned his nose up at it at first but tasted it now loves it too. Same with my husband. I didn't have mint or fresh herbs on hand so I used Italian seasoning. It worked out great but I'm sure fresh is better. A go-to lunch staple for us - 7/27/10
