Introduction

This is a flavourful way to do chicken. Tandoori spice is available in Indian stores and is dark orange. Europe's Best Nature balance is a bag of frozen vegetables in our local grocery which added to broccoli makes a generous portion and once steamed is flavoured with just a bit of sesame oil and sprinkled with sesame seeds. Ingredients

    2 boneless, skinless chicken thighs per person (12)
    1 cup of plain low fat yogurt
    1 Tablespoon of tandoori spice

    1 head of broccoli chopped into bite size pieces
    1 package of Europe's Best frozen vegetables
    1 Tablespoon of sesame oil
    1 healthy spoonful of sesame seeds

    1 1/2 cups of long brown rice

Directions

This is for 6 people.

Mix tandoori spice into yogurt in a large bowl. Add chicken and mix well to marinate while preparing other parts of meal.

Start BBQ and start boiling water for rice. When you put the rice, turn down to low and cover and put the chicken on.
BBQ chicken on medium and turn frequently (someone else doing this helps). Start a wok or pot with a small amount of water in it to cook broccoli for 5 minutes and then add frozen vegetables. There will be a lot of vegetables so make it a big enough pot! Cook for about ten minutes (I usually set my table durin this time) until all vegetables are hot then transfer to a serving bowl. Drizzle with sesame oil and sprinkle with sesame seeds. Put your rice and cooked chicken onto a serving platter. We end the meal with orange spice dark chocolate.
