Introduction
Just something I threw together that ended up being super yummy! shredded chicken, fresh spinach, mushrooms, garlic a little cheese rolled up in a half piece of lasagna and baked, with a small spoonful of spaghetti sauce on top makes this a very yummy dish, filling and low in calories! My family loved it! Ingredients

I made this as an appetizer, so it was a smaller portion, but you could make more for a full meal.
For appetizer size:
4 strips of lasagna pasta
1/3-1/2 of boneless skinless chicken breast
1 oz of fat free cream cheese
1/2 cup of mozzarella cheese part skim
1 1/2 cups of fresh spinach
1 cup of freshly chopped mushrooms
1/4 cup of spaghetti sauce
Directions
Cube up your chicken and boil until fully cooked
Break your pasta pieces in halves, and Boil as directed on box, Use a food processor to grind up fresh spinach, and then chop your mushrooms. Shred up chicken when cooked. Mix everything but the pasta together in a bowl. I microwaved my cream cheese for 20 seconds first so that it was soft and could be mixed thoroughly. When your pasta is done spoon mixture into the pasta and roll them up and place in a glass baking dish seam side down. Spread a small dollop of spaghetti sauce on top of each roll. Cover with alluminum foil and Bake at 425 for 20 minutes. The ends of the rolls were a bit crunchy and tougher and we liked it that way, but you could probably play around with the temp and time. This made 8 rollups.
