Introduction

Ingredients

    1 Box spinach/ricotta tortelloni (14 oz)
    Broccoli (1 medium stalk)
    Mushrooms (1.5 cups)
    Tomatoes (2 cups chopped)
    Cherry or grape tomatoes (one handful)
    1 medium green pepper chopped
    1 medium large chopped
    1 pound of baby shrimp (precooked and frozen)
    1 tsp Olive Oil
    1 tbsp unsalted butter
    2 cups chicken broth
    2 cloves garlic
    Cayenne pepper to taste
    Cooking spray
    Salt and pepper to taste
    Additional Italian spices to taste (oregano, basil, etc.)

Directions

This recipe uses pre-packed tortelloni that can be found in the frozen section of the grocery store. I use the spinach/ricotta kind, but any variety may be substituted. You can also use the pre-packaged ravioli or shells.

Defrost your shrimp ahead of time or place in the microwave 2-3 minutes. I typically get a pound of the frozen shrimp, but when cooked down, it's probably about 12 ounces.

Vegetables
1. Chop all the broccoli, mushrooms, tomatoes, green pepper, and onion. Leave the cherry tomatoes whole and put half the onion off to the side.
2. Heat a large pot and spray with non-stick cooking spray. Add in your vegetables and stir every minute or so. As they soften, add about a cup of chicken broth a little at a time. It will absorb and begin to make a bit of a sauce as the tomatoes release their juice.

Pasta
Prepare tortelloni according to instructions on the package. They should take about 6 minutes. Remove from heat and drain.

Shrimp (optional)
1. In a separate pan, head the tsp of Olive Oil.
2. Chop your garlic and add to the oil along with the onion you had reserved.
3. Add the defrosted pre-cooked shrimp.
4. Add a tbsp of butter and stir frequently.
5. Season with salt and pepper.
6. When the shrimp have cooked for a few minutes, sprinkle the cayenne pepper and begin to add the remaining cup of chicken broth a little at a time. The shrimp will begin to absord the broth and a light sauce will form. This process will take another 5-7 minutes.

When shrimp are fully cooked, add them and their sauce to the vegetable mix. Add additional spices to taste.

Plate by serving the shrimp and vegetable sauce on top of your tortelloni. I like to sprinkle some parmesan cheese, but that's definitely optional.

Makes 4 servings. (1 cup of tortelloni prepared with a heafty serving of vegetables)
