Ingredients

    1 lb. stew beef
    3 carrots, peeled and sliced
    1 large onion,chopped
    1 can diced tomatoes
    1 tsp paprika
    1/2 tsp marjoram
    1/4 tsp caraway seeds, crushed
    4 cups beef broth made with bouillion cubes

Directions

Saute onion in oil over medium high heat until golden. Add beef and brown, then remove to a separate plate. Add 1/2 cup of broth and scrape up brown bits from pot. Add paprika, marjoram and caraway seeds, cover and simmer 2 minutes. Add beef and back to pot, add carrots and broth to cover. Cover and simmer one hour, stirring occasionally. Add tomatoes, stir, cover and simmer another hour. Serve over egg noodles.

    Just the thing I needed to assuage my goulash craving. Actually used chicken stock instead of the beef broth and the recipe turned out to be delicious. Thank you much! - 8/1/11
