Number of Servings: 12

Ingredients

    2 cups Whole Wheat Flour
    1.33 cups of Wheat Bran
    0.33 cup Applesauce
    1 cup Apricot Jam
    0.5 cup Water
    4 Tbsp Ground Flaxseed
    4 tsp Baking Powder
    1 tsp Baking Powder
    2 tsp Cinnamon
    0.25 tsp Salt
    1 tsp Vanilla Extract
    1 Cup Walnuts

Directions

Preheat oven to 180C.

Grease and line loaf tin

Mix all dry ingredients in a large bowl. Add applesauce, Apricot jam, water and vanilla extract to mixture. Gently add the walnuts so that they do not break too much.

After cooking for 25 minutes pierce centre with knife to see if loaf is cooked right through. If not allow another 3 -5 minutes.

Makes 12 good size pieces.
